7up Pound Cake Recipe – Soft and Moist Pound Cake

Hi everyone! In this video I show you how to make a delicious and moist 7UP pound cake. This pound is so moist and soft.


3 sticks unsalted butter, softened
3 cups white sugar
5 large eggs at room temperature
1/3 cup of milk
1 tsp vanilla extract
1 lemon, zest and juice
Zest from 1 lime
3 cups of flour (all purpose or cake flour)
2 tsp baking powder
1/2 tsp salt
1 cup of 7UP soda

1. In a medium bowl, sift flour, baking powder and salt and set aside. Preheat oven to 350 degrees F. Grease or spray a 10 cup capacity bunt pan, and set aside.

2. In the bowl of a stand mixer fitted with paddle attachment over medium high speed, cream together butter and sugar for 4-6 minutes. It should be fluffy and creamy. Add the eggs one at a time, mixing well after each addition, make sure to scrape the bottom and sides of the bowl.

3. Add lemon zest and the juice from the lemon, lime zest and vanilla. Mix until well mixed. Add 1/3 of the flour along with the milk and mix to combine. Add half of the 7UP and mix. Add another 1/3 of the flour and all the 7 Up and mix then all the rest of the flour and mix until well combined.

4. Pour batter in prepared bunt pan, spread the batter batter evenly. Bake for 1 hour or until a toothpick inserted comes out clean.

5. Remove cake from oven and invert pan in a cooling rack until cake drops out. Allow to cool completely.
