    Pete you did an awesome job, well done. The more you use the pastry recipe the quicker you will get at making it. It took me a while to get it right but it is super if I do say so myself! The filling looked scrumptious. Good judgement on the tarragon too as it can be over powering if too much is used. And, yes we do get wild salmon here but it is a closed season here in our area. I would sub the salmon for wild brook trout 🙂

    I never tried salmon and tarragon together….looks amazingly delicious!

      It’s a classic French combination that really tastes good. The key is not to use too much tarragon. The pastry is so crispy and tasty too, and it perfectly offsets the delicacy of the filling.
