How to make mini quiches | 2 different flavours | perfect shortcrust pastry recipe

How to make mini quiches (bacon, sweetcorn and cheese and red pepper, sweetcorn and sun dried tomato flavour)
Makes about 11 – 12 mini quiches

235g plain flour
105g butter
3 – 4 tbsp water
2 eggs
100ml milk
A little oil
80g pancetta
Some sweetcorn
About half a red pepper
A few sun dried tomatos
A handful of cheddar cheese


Rub the butter and flour together until they look like breadcrumbs
Add in the water and stir until it forms a dough. Try not to knead it too much
Roll the dough out and cut out circles. Place these circles into a greased muffin tin, to make pastry cup shapes
In a jug, mix the egg and milk together
Fry the pancetta with a little bit of oil and put this into the pastry cups
Add the other ingredients into the pastry cups, pour the egg mix on and bake for 10 – 15 minutes, until the pastry is golden brown
